  1. First of all, line a baking sheet with parchment paper.
  2. Boil 100 milliliters of water, sugar, vanilla sugar and cinnamon in a larger pan. Then add the almonds and cook everything over medium to high heat, stirring occasionally. After 5 to 8 minutes the liquid will have evaporated and the sugar will coat the almonds with a crust.
  3. Now reduce the temperature a little and keep stirring until the sugar caramelises and all the almonds are relatively evenly coated. Pour on the prepared baking sheet. Immediately afterwards, quickly separate the almonds from each other with two forks and then let them cool. The almonds can be kept for a few days in an airtight container; they taste best when they are fresh and slightly warm.
