Vegan breaded calamari with parsley potatoes

Ingredients for 2-3 people
- 1 pack of vegan squid rings (e.g. from Formosa)
- 100 ml unsweetened soy milk
- 1 tbsp MyEy VollEy
- Spelled flour
- Whole grain breadcrumbs
- ½ kg of potatoes
- olive oil
- Chopped parsley
- Salt pepper
- Boil the potatoes until soft and then peel them (or the other way around),
- Toss in a pan with a little olive oil and parsley.

- Thaw wrapped, frozen calamari in a water bath.
- Prepare three plates: one plate with spelled flour. In the second plate, mix the EyGelb, Soyamlich well and season with salt and pepper. Third plate with breadcrumbs.
- Turn the vegan squid rings in the spelled flour.
- Then immerse in the second plate (MyEy / Sojamlich).
- Then turn in the organic breadcrumbs.
- Fry until golden brown in a pan.
- Serve immediately with the parsley potatoes.
